Ingredients

  • 1 tsp ginger, grated
  • 2 tomatoes, chopped
  • 1 cup okra, sliced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • 2 cups vegetable broth
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Stir in the chopped tomatoes and cook until they start to break down.
  4. Add the sliced okra and spices (cumin powder, coriander powder, turmeric powder, paprika, cayenne pepper, and salt). Cook for 5 minutes.
  5. Pour in the vegetable broth and bring the curry to a simmer. Let it cook for 15-20 minutes until the okra is tender.
  6. Garnish with fresh cilantro before serving.
