Ingredients
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ginger, grated
- 2 tomatoes, chopped
- 1 cup okra, sliced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- Salt to taste
- 2 cups vegetable broth
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Stir in the chopped tomatoes and cook until they start to break down.
- Add the sliced okra and spices (cumin powder, coriander powder, turmeric powder, paprika, cayenne pepper, and salt). Cook for 5 minutes.
- Pour in the vegetable broth and bring the curry to a simmer. Let it cook for 15-20 minutes until the okra is tender.
- Garnish with fresh cilantro before serving.
