Ingredients
- 1 cup dried lentils
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tomatoes, chopped
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt to taste
- 2 cups water
- Fresh cilantro for garnish
Instructions
- Rinse the lentils and soak them in water for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the chopped tomatoes and cook until they are soft and have released their juices.
- Stir in the cumin, coriander, turmeric, paprika, cayenne pepper, and salt. Cook for 2 minutes to toast the spices.
- Drain the soaked lentils and add them to the pot. Stir to combine with the spices and vegetables.
- Pour in the water and bring the curry to a boil. Reduce the heat to low, cover the pot, and simmer for 30 minutes or until the lentils are tender.
- Garnish with fresh cilantro before serving.
