Mchuzi Wa Pilipili (zanzibar Spice Delight)

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • 1 lb chicken, cut into pieces
  • 2 cups chicken broth
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is soft and translucent.
  3. Stir in the chopped tomatoes and cook until they are soft and pulpy.
  4. Add the ground cumin, ground coriander, turmeric, cayenne pepper, and paprika. Cook for 2 minutes to toast the spices.
  5. Add the chicken pieces to the pot and brown on all sides.
  6. Pour in the chicken broth and season with salt. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Garnish with chopped cilantro before serving.
