Mchuzi Wa Pilipili (zanzibar Spice Delight)

Ingredients
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- 1 lb chicken, cut into pieces
- 2 cups chicken broth
- Salt to taste
- Chopped cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is soft and translucent.
- Stir in the chopped tomatoes and cook until they are soft and pulpy.
- Add the ground cumin, ground coriander, turmeric, cayenne pepper, and paprika. Cook for 2 minutes to toast the spices.
- Add the chicken pieces to the pot and brown on all sides.
- Pour in the chicken broth and season with salt. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the chicken is cooked through and the sauce has thickened.
- Garnish with chopped cilantro before serving.
