Ingredients

  • 500g firm white fish fillets, cut into chunks
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 red bell pepper, sliced
  • 2 cups coconut milk
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and cook until soft.
  2. Add the garlic, turmeric, curry powder, and paprika. Stir for 1-2 minutes until fragrant.
  3. Add the tomatoes and bell pepper, and cook for another 5 minutes.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add the fish chunks and simmer for 15-20 minutes until the fish is cooked through.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
