Ingredients

  • 1 cup cornmeal

  • 1 cup milk
  • 1/2 cup melted butter
  • 1 cup tomato, diced
  • 1/4 cup onion, finely chopped
  • 1/4 cup green bell pepper, diced
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, mix together the meali pap, cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the cornbread is baking, prepare the tomato relish. In a saucepan, combine the tomato, onion, green bell pepper, vinegar, sugar, and salt. Cook over medium heat for 10-15 minutes, or until the vegetables are tender and the mixture has thickened slightly.
