Ingredients
- 2 cups meali pap
- 1 cup cornmeal

- 1/2 cup melted butter
- 1 cup tomato, diced
- 1/4 cup onion, finely chopped
- 1/4 cup green bell pepper, diced
- 1/4 cup vinegar
- 1/4 cup sugar
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix together the meali pap, cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- While the cornbread is baking, prepare the tomato relish. In a saucepan, combine the tomato, onion, green bell pepper, vinegar, sugar, and salt. Cook over medium heat for 10-15 minutes, or until the vegetables are tender and the mixture has thickened slightly.
