Ingredients

  • 2 potatoes, diced

  • 6 cups beef broth

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the carrots, potatoes, and barley to the pot.
  4. Pour in the beef broth and bring to a boil.
  5. Reduce the heat, cover, and simmer for 45 minutes to 1 hour, or until the meat is tender and the vegetables are cooked through.
