Meat And Vegetable Soup (sorpa)
Sorpa is a traditional Kazakh meat and vegetable soup that is hearty, flavorful, and perfect for warming up on a cold day.
Ingredients
- 1 lb beef, cut into cubes
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1/2 cup barley
- 6 cups beef broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef over medium heat.
- Add the chopped onion and cook until translucent.
- Add the carrots, potatoes, and barley to the pot.
- Pour in the beef broth and bring to a boil.
- Reduce the heat, cover, and simmer for 45 minutes to 1 hour, or until the meat is tender and the vegetables are cooked through.
- Season with salt and pepper to taste before serving.
