This Meat and Vegetable Stew, also known as Yemeni Saltah, is a traditional dish from Eastern Arabian cuisine that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1 lb lamb or beef, cut into chunks
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 green chilies, sliced
- 1 cup chopped spinach
- 1 cup chopped cilantro
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 4 cups beef or vegetable broth
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onions and cook until softened.
- Add the minced garlic, diced tomatoes, and green chilies. Cook for a few minutes until the tomatoes break down.
- Add the meat chunks and brown on all sides.
- Stir in the ground cumin, ground coriander, and turmeric.
- Pour in the beef or vegetable broth and bring to a simmer. Cover and cook for 45-60 minutes, or until the meat is tender.
- Add the chopped spinach and cilantro, and cook for an additional 5 minutes.
- Season with salt and black pepper to taste.
- Serve the stew hot with rice or bread.
