Ingredients

  • 1 lb lamb or beef, cut into chunks
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 green chilies, sliced
  • 1 cup chopped spinach
  • 1 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 4 cups beef or vegetable broth
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onions and cook until softened.
  3. Add the minced garlic, diced tomatoes, and green chilies. Cook for a few minutes until the tomatoes break down.
  4. Add the meat chunks and brown on all sides.
  5. Stir in the ground cumin, ground coriander, and turmeric.
  6. Pour in the beef or vegetable broth and bring to a simmer. Cover and cook for 45-60 minutes, or until the meat is tender.
  7. Add the chopped spinach and cilantro, and cook for an additional 5 minutes.
  8. Season with salt and black pepper to taste.
  9. Serve the stew hot with rice or bread.
