Meat Pastry Juice (Samsa Shalgam) is a traditional dish from Kazakh Cuisine that combines savory meat pastries with a refreshing turnip juice. This unique combination of flavors and textures is a popular street food in Kazakhstan.
Ingredients
- 500g ground beef
- 2 onions, finely chopped
- 2 tsp salt
- 1 tsp black pepper
- 1 package of puff pastry sheets
- 1 kg turnips, peeled and chopped
- 1.5 liters water
- 1 tbsp vinegar
Instructions
- In a bowl, mix the ground beef, chopped onions, salt, and black pepper.
- Cut the puff pastry sheets into squares and place a spoonful of the meat mixture in the center of each square. Fold the pastry over the filling to form a triangle and seal the edges.
- Place the pastries on a baking sheet and bake in a preheated oven at 200°C for 20-25 minutes or until golden brown.
- Meanwhile, in a large pot, bring the water to a boil and add the chopped turnips. Cook for 20 minutes or until the turnips are soft.
- Remove the turnips from the pot and place them in a blender. Add the vinegar and blend until smooth.
- Strain the turnip juice into a pitcher and refrigerate until ready to serve.
- Serve the hot meat pastries with a glass of cold turnip juice.
