Meat Pie (empadão De Carne)

Ingredients

  • 2 lbs ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup carrots, diced
  • 1 cup corn kernels
  • 1 cup tomato sauce
  • 1/2 cup chicken or beef broth
  • Salt and pepper to taste
  • 4 large potatoes, peeled and diced
  • 1/2 cup milk
  • 4 tbsp butter
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Add the onion and garlic, and cook until the onion is translucent.
  2. Stir in the peas, carrots, corn, tomato sauce, and broth. Season with salt and pepper. Simmer for 10 minutes, then remove from heat and set aside.
  3. Boil the potatoes in a large pot of salted water until tender. Drain and mash with the milk and butter until smooth. Season with salt and pepper to taste.
  4. Preheat the oven to 375°F (190°C).
  5. Spread half of the mashed potatoes in the bottom of a greased baking dish. Spoon the meat mixture on top, then cover with the remaining mashed potatoes.
  6. Brush the top with the beaten egg to create a golden crust.
  7. Bake for 30-40 minutes, or until the top is golden brown.
  8. Let it cool for a few minutes before serving.
