Meat Stew (somali Maraq)
This Meat Stew, known as Maraq in Somali cuisine, is a hearty and flavorful dish that is perfect for a comforting meal. Made with a blend of aromatic spices and tender meat, this stew is a staple in Somali households.
Ingredients
- 1 kg lamb or beef, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 garlic cloves, minced
- 2 tbsp vegetable oil
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and sauté until they are soft and translucent.
- Add the minced garlic and cook for another minute.
- Add the meat cubes to the pot and brown them on all sides.
- Stir in the diced tomatoes, cumin, coriander, turmeric, paprika, salt, and pepper.
- Pour in the water and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and let the stew simmer for about 2 hours, or until the meat is tender.
- Adjust the seasoning if needed and serve the meat stew hot.
