Meat Stuffed Plantains (tostones De Carne)

Ingredients

  • 2 ripe plantains
  • 1 pound ground beef
  • 1 onion, diced

  • Salt and pepper to taste
  • 1/4 cup vegetable oil for frying

Instructions

  1. Peel the plantains and cut them into 1-inch thick slices.
  2. In a skillet, heat the vegetable oil over medium-high heat. Fry the plantain slices until they are golden brown. Remove from the skillet and flatten them with a tostonera or the back of a heavy glass.
  3. In the same skillet, cook the ground beef, onion, and garlic until the meat is browned and the onions are soft. Add the cumin, paprika, salt, and pepper. Mix well.
  4. Place a spoonful of the meat mixture onto each flattened plantain slice. Fold the plantain over the filling to form a small sandwich.
