Meatball Soup (ciorbă De Perișoare)

Ingredients

  • 1 pound ground beef
  • 1/2 cup rice
  • 1 onion, finely chopped
  • 2 carrots, grated
  • 1 egg
  • 1/4 cup breadcrumbs
  • 6 cups beef or vegetable broth
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix the ground beef, rice, onion, carrots, egg, breadcrumbs, salt, and pepper. Form small meatballs and set aside.
  2. In a large pot, bring the broth to a boil. Add the tomato paste and bay leaf.
  3. Gently drop the meatballs into the boiling broth. Reduce heat and simmer for 30 minutes, or until the meatballs are cooked through and the rice is tender.
  4. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
