Meatball Soup, known as Ciorbă de perișoare, is a traditional Moldovan dish that is both hearty and flavorful. This soup is perfect for a comforting meal on a chilly day.
Ingredients
- 1 pound ground beef
- 1/2 cup rice
- 1 onion, finely chopped
- 2 carrots, grated
- 1 egg
- 1/4 cup breadcrumbs
- 6 cups beef or vegetable broth
- 2 tablespoons tomato paste
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a bowl, mix the ground beef, rice, onion, carrots, egg, breadcrumbs, salt, and pepper. Form small meatballs and set aside.
- In a large pot, bring the broth to a boil. Add the tomato paste and bay leaf.
- Gently drop the meatballs into the boiling broth. Reduce heat and simmer for 30 minutes, or until the meatballs are cooked through and the rice is tender.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
