Mechoui (berber-style Grilled Lamb Skewers)

Ingredients

  • 2 lbs lamb, cut into cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground ginger
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the olive oil, minced garlic, cumin, paprika, ginger, coriander, cayenne pepper, salt, and pepper to create the marinade.
  2. Add the lamb cubes to the marinade, making sure they are well coated, and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb cubes onto the soaked wooden skewers.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. Remove from the grill and let rest for a few minutes before serving.
