Mechoui (berber-style Grilled Lamb Skewers)
Mechoui is a traditional Berber-style grilled lamb dish that is popular in North African cuisine. The lamb is marinated with a blend of aromatic spices and then grilled to perfection, resulting in tender and flavorful skewers that are perfect for any occasion.
Ingredients
- 2 lbs lamb, cut into cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground ginger
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine the olive oil, minced garlic, cumin, paprika, ginger, coriander, cayenne pepper, salt, and pepper to create the marinade.
- Add the lamb cubes to the marinade, making sure they are well coated, and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb cubes onto the soaked wooden skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- Remove from the grill and let rest for a few minutes before serving.
