Mediterranean Stuffed Peppers

Ingredients

  • 4 large bell peppers, any color
  • 1 cup cooked quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, feta cheese, parsley, garlic, oregano, salt, pepper, and olive oil. Mix well.
  4. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  5. Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until the peppers are tender.
  6. Remove from the oven and let cool for a few minutes before serving.
