Mediterranean Stuffed Peppers
Mediterranean Stuffed Peppers are a delicious and healthy dish that combines the flavors of the Mediterranean region with colorful bell peppers. This recipe is perfect for a family dinner or a gathering with friends.
Ingredients
- 4 large bell peppers, any color
- 1 cup cooked quinoa
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, feta cheese, parsley, garlic, oregano, salt, pepper, and olive oil. Mix well.
- Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
- Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until the peppers are tender.
- Remove from the oven and let cool for a few minutes before serving.
