Ingredients

  • 2 large tomatoes, sliced
  • 1 large eggplant, sliced
  • 2 zucchinis, sliced
  • 1 onion, thinly sliced
  • 4 garlic cloves, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, arrange the sliced tomatoes, eggplant, zucchinis, onion, and minced garlic in an overlapping pattern.
  3. Drizzle the olive oil over the vegetables and season with salt, pepper, thyme, and oregano.
  4. Cover the dish with foil and bake for 30 minutes.
  5. Remove the foil, sprinkle the grated Parmesan cheese over the vegetables, and bake for an additional 15 minutes until the cheese is golden and bubbly.
  6. Let it cool for a few minutes before serving.
