Tian de légumes méditerranéen, or Mediterranean Vegetable Tian, is a traditional dish from Monégasque cuisine. This colorful and flavorful vegetable medley is a perfect representation of the fresh and vibrant flavors of the Mediterranean region.
Ingredients
- 2 large tomatoes, sliced
- 1 large eggplant, sliced
- 2 zucchinis, sliced
- 1 onion, thinly sliced
- 4 garlic cloves, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, arrange the sliced tomatoes, eggplant, zucchinis, onion, and minced garlic in an overlapping pattern.
- Drizzle the olive oil over the vegetables and season with salt, pepper, thyme, and oregano.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil, sprinkle the grated Parmesan cheese over the vegetables, and bake for an additional 15 minutes until the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
