Medovik (cossack Honey Cake)
Medovik, also known as Cossack Honey Cake, is a classic dessert from Cossack cuisine. This multi-layered cake is made with honey-infused dough and a creamy filling, creating a sweet and indulgent treat.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 3 tablespoons honey
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups sour cream
Instructions
- In a bowl, combine the flour and baking soda. Set aside.
- In a saucepan, melt the butter, sugar, and honey over low heat. Let it cool slightly.
- Beat in the eggs and vanilla extract. Gradually add the flour mixture and mix until a dough forms.
- Divide the dough into 8 equal parts and roll each into a thin circle. Place on a baking sheet and bake at 350°F for 5-7 minutes, or until golden brown. Let cool.
- For the filling, mix the sour cream with sugar until smooth.
- Spread the filling between the baked dough layers, stacking them on top of each other.
- Refrigerate the cake for at least 4 hours before serving.
