Medovik (heavenly Honey Cake)

Medovik, also known as Heavenly Honey Cake, is a classic dessert from Uzbek cuisine. This multi-layered cake is made with honey-infused dough and a creamy filling, creating a sweet and indulgent treat that is perfect for special occasions or gatherings.

Medovik (heavenly Honey Cake)

Ingredients

  • 4 cups all-purpose flour
  • 1 cup honey
  • 1 cup sugar
  • 1 cup unsalted butter
  • 4 eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 cups sour cream

Instructions

  1. In a mixing bowl, cream together the butter and sugar. Add the eggs one at a time, mixing well after each addition. Stir in the honey and vanilla extract.
  2. In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  3. Divide the dough into 8 equal portions and roll each portion into a thin circle. Place the circles on a baking sheet and bake at 350°F for 8-10 minutes, or until golden brown.
  4. While the dough is baking, prepare the filling by mixing the sour cream with sugar to taste.
  5. Once the dough circles are baked and cooled, spread a layer of the sour cream filling on each circle and stack them on top of each other.
  6. Refrigerate the cake for at least 4 hours before serving to allow the flavors to meld together.
