Ingredients
- 3 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 cup honey
- 1 cup sour cream

- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- In a bowl, whisk together the flour, baking soda, cinnamon, cloves, ginger, and salt. Set aside.
- In a separate bowl, cream the butter and sugar until light and fluffy. Add the egg and beat well. Gradually add the honey, mixing until well combined.
- Gradually add the dry ingredients to the honey mixture, alternating with the sour cream. Mix until a smooth dough forms.
- Divide the dough into 8 equal parts and roll each part into a thin circle. Place the circles on a baking sheet and bake for 8-10 minutes, or until golden brown. Let the layers cool completely.
- In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form. Fold in the vanilla extract.
- Place one baked layer on a serving plate and spread a thin layer of whipped cream on top. Continue layering the cake with cream between each layer. Finish with a layer of cream on top.
- Refrigerate the cake for at least 4 hours before serving to allow the flavors to meld together.
