Mee Bandung Bonanza

Ingredients

  • 250g yellow noodles
  • 200g prawns
  • 150g chicken breast, sliced
  • 1 cup bean sprouts
  • 2 tomatoes, diced
  • 4 cups chicken stock
  • 4 tablespoons chili paste
  • 3 cloves garlic, minced
  • 2 shallots, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon tamarind paste
  • 1 tablespoon sugar
  • 1 teaspoon ground white pepper
  • 2 tablespoons cooking oil

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Sauté the garlic and shallots until fragrant.
  3. Add the prawns and chicken, and cook until they are no longer pink.
  4. Pour in the chicken stock, chili paste, soy sauce, tamarind paste, sugar, and ground white pepper. Bring to a boil.
  5. Add the yellow noodles and bean sprouts, and cook for 3-4 minutes.
  6. Stir in the diced tomatoes and cook for another 2 minutes.
  7. Divide the mee bandung into serving bowls and serve hot.
