Ingredients
- 500g fresh yellow noodles
- 300g prawns, cleaned and deveined
- 200g chicken breast, sliced
- 1 cup bean sprouts
- 4 cups chicken broth
- 1 cup coconut milk
- 4 shallots, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 tablespoons chili paste
- 2 tablespoons tamarind paste
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Heat vegetable oil in a large pot over medium heat. Sauté shallots and garlic until fragrant.
- Add chili paste and continue to sauté for 2 minutes.
- Pour in chicken broth and bring to a boil.
- Add prawns, chicken, and tomatoes. Simmer for 15 minutes.
- Stir in tamarind paste, soy sauce, and coconut milk. Season with salt to taste.
- Add yellow noodles and bean sprouts. Cook for another 5 minutes.
- Divide the noodle soup into serving bowls and serve hot.
