Mee Bandung Muar (Muar-style Spicy Noodle Soup)

Ingredients

  • 500g fresh yellow noodles
  • 300g prawns, cleaned and deveined
  • 200g chicken breast, sliced
  • 1 cup bean sprouts
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 tablespoons chili paste
  • 2 tablespoons tamarind paste
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté shallots and garlic until fragrant.
  2. Add chili paste and continue to sauté for 2 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Add prawns, chicken, and tomatoes. Simmer for 15 minutes.
  5. Stir in tamarind paste, soy sauce, and coconut milk. Season with salt to taste.
  6. Add yellow noodles and bean sprouts. Cook for another 5 minutes.
  7. Divide the noodle soup into serving bowls and serve hot.
