Mee Goreng Madness
Mee Goreng Madness is a popular Singaporean Chinese dish that is known for its bold flavors and spicy kick. This stir-fried noodle dish is a favorite among locals and visitors alike, and it's easy to see why!
Ingredients
- 250g yellow noodles
- 200g prawns, peeled and deveined
- 2 eggs
- 1 block of tofu, diced
- 1 cup bean sprouts
- 4 cloves garlic, minced
- 2 shallots, thinly sliced
- 2 red chilies, sliced
- 1 tomato, diced
- 4 tablespoons soy sauce
- 3 tablespoons kecap manis (sweet soy sauce)
- 2 tablespoons vegetable oil
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
Instructions
- Boil the yellow noodles according to package instructions, then drain and set aside.
- In a wok, heat 1 tablespoon of vegetable oil over medium heat. Add the prawns and stir-fry until they turn pink. Remove from the wok and set aside.
- In the same wok, add another tablespoon of oil. Crack the eggs into the wok and scramble until just set. Remove from the wok and set aside.
- Heat the remaining oil in the wok. Add the garlic, shallots, and chilies, and stir-fry until fragrant.
- Add the tofu and stir-fry for 2-3 minutes.
- Stir in the soy sauce, kecap manis, tamarind paste, and sugar.
- Add the cooked noodles, prawns, scrambled eggs, bean sprouts, and tomato. Toss everything together until well combined and heated through.
- Transfer to a serving dish and serve hot.
