Mee Goreng Madness

Ingredients

  • 250g yellow noodles
  • 200g prawns, peeled and deveined
  • 2 eggs
  • 1 block of tofu, diced
  • 1 cup bean sprouts
  • 4 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 2 red chilies, sliced
  • 1 tomato, diced
  • 4 tablespoons soy sauce
  • 3 tablespoons kecap manis (sweet soy sauce)
  • 2 tablespoons vegetable oil
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar

Instructions

  1. Boil the yellow noodles according to package instructions, then drain and set aside.
  2. In a wok, heat 1 tablespoon of vegetable oil over medium heat. Add the prawns and stir-fry until they turn pink. Remove from the wok and set aside.
  3. In the same wok, add another tablespoon of oil. Crack the eggs into the wok and scramble until just set. Remove from the wok and set aside.
  4. Heat the remaining oil in the wok. Add the garlic, shallots, and chilies, and stir-fry until fragrant.
  5. Add the tofu and stir-fry for 2-3 minutes.
  6. Stir in the soy sauce, kecap manis, tamarind paste, and sugar.
  7. Add the cooked noodles, prawns, scrambled eggs, bean sprouts, and tomato. Toss everything together until well combined and heated through.
  8. Transfer to a serving dish and serve hot.
