Mee Goreng Mamak (Indian-style Fried Noodles)

Ingredients
- 300g yellow noodles
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red chili, sliced
- 1 small carrot, julienned
- 100g cabbage, shredded
- 2 tablespoons soy sauce
- 1 tablespoon curry powder
- 1 tablespoon tomato ketchup
- 1 tablespoon chili sauce
- 1 tablespoon sugar
- Salt to taste
Instructions
- Boil the yellow noodles according to package instructions, then drain and set aside.
- Heat vegetable oil in a wok or large pan over medium heat.
- Sauté the onion, garlic, and red chili until fragrant.
- Add the carrot and cabbage, and stir-fry for 2-3 minutes.
- Push the vegetables to the side of the wok, and add the boiled noodles to the center.
- Combine the soy sauce, curry powder, tomato ketchup, chili sauce, sugar, and salt in a small bowl, then pour over the noodles.
- Stir-fry everything together until well combined and heated through.
- Transfer the Indian-style Fried Noodles to a serving dish and serve hot.
