Ingredients

  • 300g yellow noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red chili, sliced
  • 1 small carrot, julienned
  • 100g cabbage, shredded
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • 1 tablespoon tomato ketchup
  • 1 tablespoon chili sauce
  • 1 tablespoon sugar
  • Salt to taste

Instructions

  1. Boil the yellow noodles according to package instructions, then drain and set aside.
  2. Heat vegetable oil in a wok or large pan over medium heat.
  3. Sauté the onion, garlic, and red chili until fragrant.
  4. Add the carrot and cabbage, and stir-fry for 2-3 minutes.
  5. Push the vegetables to the side of the wok, and add the boiled noodles to the center.
  6. Combine the soy sauce, curry powder, tomato ketchup, chili sauce, sugar, and salt in a small bowl, then pour over the noodles.
  7. Stir-fry everything together until well combined and heated through.
  8. Transfer the Indian-style Fried Noodles to a serving dish and serve hot.
