Mee Jawa (Javanese-style Noodle Soup)

Ingredients
- 250g yellow noodles
- 200g bean sprouts
- 150g firm tofu, cubed
- 2 hard-boiled eggs, halved
- 4 tablespoons cooking oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons chili paste
- 1 teaspoon tamarind paste
- 1 tablespoon sweet soy sauce
- 1 tablespoon sugar
- 4 cups water
- Salt to taste
Instructions
- Boil the yellow noodles and bean sprouts until tender. Drain and set aside.
- In a large pot, heat the cooking oil over medium heat. Sauté the chopped onion and minced garlic until fragrant.
- Add the chili paste, tamarind paste, sweet soy sauce, and sugar. Stir well to combine.
- Pour in the water and bring the soup to a boil. Reduce the heat and let it simmer for 10 minutes.
- Season the soup with salt to taste.
- Divide the boiled noodles, bean sprouts, and tofu into serving bowls. Ladle the hot soup over the ingredients.
- Garnish each bowl with a halved hard-boiled egg.
