Mee Jawa (Javanese-style Noodle Soup)

Ingredients

  • 250g yellow noodles
  • 200g bean sprouts
  • 150g firm tofu, cubed
  • 2 hard-boiled eggs, halved
  • 4 tablespoons cooking oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili paste
  • 1 teaspoon tamarind paste
  • 1 tablespoon sweet soy sauce
  • 1 tablespoon sugar
  • 4 cups water
  • Salt to taste

Instructions

  1. Boil the yellow noodles and bean sprouts until tender. Drain and set aside.
  2. In a large pot, heat the cooking oil over medium heat. Sauté the chopped onion and minced garlic until fragrant.
  3. Add the chili paste, tamarind paste, sweet soy sauce, and sugar. Stir well to combine.
  4. Pour in the water and bring the soup to a boil. Reduce the heat and let it simmer for 10 minutes.
  5. Season the soup with salt to taste.
  6. Divide the boiled noodles, bean sprouts, and tofu into serving bowls. Ladle the hot soup over the ingredients.
  7. Garnish each bowl with a halved hard-boiled egg.
