Mee Lao (lao-style Fried Noodles)

Ingredients

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced cabbage
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  1. Soak the rice noodles in warm water for 10 minutes, then drain.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
  3. Add the minced garlic and stir-fry for 1 minute.
  4. Add the carrots, bell peppers, and cabbage, and stir-fry for 3-4 minutes until slightly tender.
  5. Push the vegetables to the side of the pan, then add the drained rice noodles to the center.
  6. Pour the soy sauce, oyster sauce, sugar, and black pepper over the noodles, and toss to combine with the vegetables.
  7. Continue stir-frying for 3-4 minutes until the noodles are tender and well-coated with the sauce.
  8. Remove from heat and stir in the chopped green onions and cilantro.
  9. Serve the Mee Lao hot and enjoy!
