Mee Lao (lao-style Fried Noodles)

Ingredients
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1/2 cup sliced carrots
- 1/2 cup sliced bell peppers
- 1/2 cup sliced cabbage
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tsp sugar
- 1/2 tsp black pepper
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
Instructions
- Soak the rice noodles in warm water for 10 minutes, then drain.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the minced garlic and stir-fry for 1 minute.
- Add the carrots, bell peppers, and cabbage, and stir-fry for 3-4 minutes until slightly tender.
- Push the vegetables to the side of the pan, then add the drained rice noodles to the center.
- Pour the soy sauce, oyster sauce, sugar, and black pepper over the noodles, and toss to combine with the vegetables.
- Continue stir-frying for 3-4 minutes until the noodles are tender and well-coated with the sauce.
- Remove from heat and stir in the chopped green onions and cilantro.
- Serve the Mee Lao hot and enjoy!
