Mee Rebus Extravaganza

Ingredients

  • 500g yellow noodles
  • 200g bean sprouts
  • 2 potatoes, boiled and mashed
  • 1 cup of prawn stock
  • 4 cloves garlic
  • 5 shallots
  • 2 stalks lemongrass
  • 4 dried chilies, soaked
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon sugar
  • Salt to taste
  • 2 tablespoons cooking oil

Instructions

  1. Blend garlic, shallots, lemongrass, and dried chilies into a paste.
  2. Heat oil in a pan and sauté the paste until fragrant.
  3. Add turmeric, coriander, and cumin powder. Stir well.
  4. Pour in prawn stock and mashed potatoes. Simmer for 10 minutes.
  5. Add sugar and salt to taste.
  6. Cook yellow noodles and bean sprouts in boiling water for 2 minutes. Drain and set aside.
  7. Pour the gravy over the noodles and bean sprouts.
