Ingredients
- 500g yellow noodles
- 200g bean sprouts
- 2 potatoes, boiled and mashed
- 1 cup of prawn stock
- 4 cloves garlic
- 5 shallots
- 2 stalks lemongrass
- 4 dried chilies, soaked
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon sugar

Instructions
- Blend garlic, shallots, lemongrass, and dried chilies into a paste.
- Heat oil in a pan and sauté the paste until fragrant.
- Add turmeric, coriander, and cumin powder. Stir well.
- Pour in prawn stock and mashed potatoes. Simmer for 10 minutes.
- Add sugar and salt to taste.
- Cook yellow noodles and bean sprouts in boiling water for 2 minutes. Drain and set aside.
- Pour the gravy over the noodles and bean sprouts.
