Mee Siam Mania
Mee Siam is a popular spicy and tangy noodle dish in Singaporean Chinese cuisine. It is a flavorful and satisfying dish that is perfect for a quick and delicious meal.
Ingredients
- 200g rice vermicelli
- 200g prawns, peeled and deveined
- 100g firm tofu, cut into small cubes
- 2 eggs, beaten
- 1 cup bean sprouts
- 2 tablespoons tamarind paste
- 3 tablespoons chili paste
- 3 cloves garlic, minced
- 2 shallots, finely chopped
- 1 tablespoon dried shrimp, soaked and drained
- 2 tablespoons vegetable oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cup water
Instructions
- Soak the rice vermicelli in hot water for 5 minutes, then drain and set aside.
- Heat the vegetable oil in a wok over medium heat. Add the garlic and shallots, and stir-fry until fragrant.
- Add the prawns, tofu, and dried shrimp, and stir-fry until the prawns are cooked.
- Push the ingredients to one side of the wok, pour the beaten eggs into the empty space, and scramble until set.
- Add the tamarind paste, chili paste, sugar, and salt. Stir-fry until well combined.
- Add the water and bring to a simmer. Then, add the bean sprouts and cooked rice vermicelli. Toss everything together until well mixed and heated through.
- Divide the mee siam into serving bowls and serve hot.
