Ingredients

  • 200g rice vermicelli
  • 200g prawns, peeled and deveined
  • 100g firm tofu, cut into small cubes
  • 2 eggs, beaten
  • 1 cup bean sprouts
  • 2 tablespoons tamarind paste
  • 3 tablespoons chili paste
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 tablespoon dried shrimp, soaked and drained
  • 2 tablespoons vegetable oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup water

Instructions

  1. Soak the rice vermicelli in hot water for 5 minutes, then drain and set aside.
  2. Heat the vegetable oil in a wok over medium heat. Add the garlic and shallots, and stir-fry until fragrant.
  3. Add the prawns, tofu, and dried shrimp, and stir-fry until the prawns are cooked.
  4. Push the ingredients to one side of the wok, pour the beaten eggs into the empty space, and scramble until set.
  5. Add the tamarind paste, chili paste, sugar, and salt. Stir-fry until well combined.
  6. Add the water and bring to a simmer. Then, add the bean sprouts and cooked rice vermicelli. Toss everything together until well mixed and heated through.
  7. Divide the mee siam into serving bowls and serve hot.
