Mee Siam Sensation

Ingredients
- 200g rice vermicelli
- 200g prawns, peeled and deveined
- 2 tablespoons tamarind paste
- 3 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red chili, sliced
- 2 tablespoons dried shrimp, soaked and drained
- 1 tablespoon sugar
- 1 cup bean sprouts
- 2 eggs, beaten
- 1/4 cup chopped chives
- 1 lime, cut into wedges
Instructions
- Soak the rice vermicelli in hot water for 5 minutes, then drain and set aside.
- Heat 1 tablespoon of oil in a wok over medium heat, add the prawns and stir-fry until cooked. Remove and set aside.
- Heat the remaining oil in the wok, add the onion, garlic, and chili. Stir-fry until fragrant.
- Add the tamarind paste, dried shrimp, and sugar. Stir well.
- Add the soaked rice vermicelli and bean sprouts. Stir-fry for 2-3 minutes.
- Push the noodles to one side of the wok, pour the beaten eggs onto the empty side. Scramble the eggs until set, then mix with the noodles.
- Add the cooked prawns and chives. Toss everything together until well combined.
- Serve the Mee Siam with lime wedges on the side.
