Mee Siam Sensation

Ingredients

  • 200g rice vermicelli
  • 200g prawns, peeled and deveined
  • 2 tablespoons tamarind paste
  • 3 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red chili, sliced
  • 2 tablespoons dried shrimp, soaked and drained
  • 1 tablespoon sugar
  • 1 cup bean sprouts
  • 2 eggs, beaten
  • 1/4 cup chopped chives
  • 1 lime, cut into wedges

Instructions

  1. Soak the rice vermicelli in hot water for 5 minutes, then drain and set aside.
  2. Heat 1 tablespoon of oil in a wok over medium heat, add the prawns and stir-fry until cooked. Remove and set aside.
  3. Heat the remaining oil in the wok, add the onion, garlic, and chili. Stir-fry until fragrant.
  4. Add the tamarind paste, dried shrimp, and sugar. Stir well.
  5. Add the soaked rice vermicelli and bean sprouts. Stir-fry for 2-3 minutes.
  6. Push the noodles to one side of the wok, pour the beaten eggs onto the empty side. Scramble the eggs until set, then mix with the noodles.
  7. Add the cooked prawns and chives. Toss everything together until well combined.
  8. Serve the Mee Siam with lime wedges on the side.
