Mee Soto Surprise
Mee Soto Surprise is a traditional Singaporean noodle soup dish that is packed with flavorful spices and tender chicken. This recipe adds a surprise element to the classic Mee Soto by incorporating a special ingredient that elevates the dish to a whole new level!
Ingredients
- 500g chicken thighs, cut into pieces
- 200g dried yellow noodles
- 1 stalk lemongrass, smashed
- 4 cloves garlic, minced
- 1 onion, thinly sliced
- 2 tomatoes, diced
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon turmeric powder
- 4 cups chicken broth
- 1 cup coconut milk
- Salt and pepper to taste
- 1 tablespoon cooking oil
- 1 lime, cut into wedges
Instructions
- In a large pot, heat the cooking oil over medium heat. Add the minced garlic, sliced onion, and smashed lemongrass. Sauté until fragrant.
- Add the ground coriander, cumin, and turmeric powder to the pot. Stir well to combine with the aromatics.
- Add the chicken pieces to the pot and cook until they are no longer pink on the outside.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes.
- Add the diced tomatoes and coconut milk to the pot. Simmer for an additional 15 minutes.
- Cook the dried yellow noodles according to the package instructions. Drain and set aside.
- To serve, divide the cooked noodles into bowls and ladle the hot soup over the noodles. Garnish with lime wedges.
