Mee Soto Surprise

Ingredients

  • 500g chicken thighs, cut into pieces
  • 200g dried yellow noodles
  • 1 stalk lemongrass, smashed
  • 4 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 tomatoes, diced
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric powder
  • 4 cups chicken broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 1 tablespoon cooking oil
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the minced garlic, sliced onion, and smashed lemongrass. Sauté until fragrant.
  2. Add the ground coriander, cumin, and turmeric powder to the pot. Stir well to combine with the aromatics.
  3. Add the chicken pieces to the pot and cook until they are no longer pink on the outside.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes.
  5. Add the diced tomatoes and coconut milk to the pot. Simmer for an additional 15 minutes.
  6. Cook the dried yellow noodles according to the package instructions. Drain and set aside.
  7. To serve, divide the cooked noodles into bowls and ladle the hot soup over the noodles. Garnish with lime wedges.
