Mehalabia (yemeni Spiced Rice Pudding)

Ingredients
- 1/2 cup short-grain rice
- 4 cups whole milk
- 1/2 cup sugar
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cinnamon
- 1/4 cup chopped pistachios, for garnish
- 1/4 cup rose water, for garnish
Instructions
- In a large saucepan, combine the rice and milk. Bring to a gentle boil over medium heat, stirring occasionally.
- Reduce the heat to low and simmer, stirring frequently, for about 15-20 minutes or until the rice is tender and the mixture has thickened.
- Stir in the sugar, ground cardamom, and ground cinnamon. Cook for an additional 5 minutes, stirring constantly.
- Remove the saucepan from the heat and let the mehalabia cool slightly.
- Divide the mehalabia into serving bowls and refrigerate for at least 2 hours, or until chilled.
- Before serving, garnish with chopped pistachios and a drizzle of rose water.
