Ingredients

  • 2 medium zucchinis, grated
  • 1 small onion, grated
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/2 cup crumbled feta cheese
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the grated zucchini, onion, parsley, mint, feta cheese, flour, beaten eggs, cumin, salt, and black pepper. Mix well.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Scoop about 1/4 cup of the zucchini mixture and drop it into the hot oil, flattening it slightly with a spatula. Cook for 3-4 minutes on each side, or until golden brown.
  4. Transfer the fritters to a paper towel-lined plate to drain excess oil.
  5. Serve the Mehshi Kousa hot with a side of yogurt or tahini sauce.
