Mehshi Kousa, also known as Lebanese Zucchini Fritters, are a delicious and popular Levantine dish. These fritters are made with zucchini, herbs, and spices, and are perfect for a light and flavorful appetizer or snack.
Ingredients
- 2 medium zucchinis, grated
- 1 small onion, grated
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/2 cup crumbled feta cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, combine the grated zucchini, onion, parsley, mint, feta cheese, flour, beaten eggs, cumin, salt, and black pepper. Mix well.
- Heat vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture and drop it into the hot oil, flattening it slightly with a spatula. Cook for 3-4 minutes on each side, or until golden brown.
- Transfer the fritters to a paper towel-lined plate to drain excess oil.
- Serve the Mehshi Kousa hot with a side of yogurt or tahini sauce.
