Mei Fun
Mei Fun is a delicious and versatile dish that originates from Chinese cuisine. It is a stir-fried noodle dish that can be customized with various ingredients to suit your taste.
Ingredients
- 8 oz rice vermicelli noodles
- 2 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- 1 cup bean sprouts
- 2 eggs, beaten
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/4 cup chopped green onions
Instructions
- Soak the rice vermicelli noodles in hot water for 5 minutes, then drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.
- Add the onion and garlic, and stir-fry for 1 minute.
- Add the carrot, bell pepper, and bean sprouts, and stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Push the vegetables to the side of the wok, pour the beaten eggs into the center, and scramble until set.
- Add the soaked noodles, soy sauce, oyster sauce, and sesame oil to the wok, and toss everything together until well combined.
- Stir in the chopped green onions, then remove from heat.
- Transfer the mei fun to serving plates and serve hot.
