Ingredients

  • 8 oz rice vermicelli noodles
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 1 cup bean sprouts
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1/4 cup chopped green onions

Instructions

  1. Soak the rice vermicelli noodles in hot water for 5 minutes, then drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat.
  3. Add the onion and garlic, and stir-fry for 1 minute.
  4. Add the carrot, bell pepper, and bean sprouts, and stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  5. Push the vegetables to the side of the wok, pour the beaten eggs into the center, and scramble until set.
  6. Add the soaked noodles, soy sauce, oyster sauce, and sesame oil to the wok, and toss everything together until well combined.
  7. Stir in the chopped green onions, then remove from heat.
  8. Transfer the mei fun to serving plates and serve hot.
