Melanzane Alla Parmigiana

Ingredients

  • 2 large eggplants, sliced
  • 2 cups tomato sauce
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sprinkle the eggplant slices with salt and let them sit for 15 minutes to release excess moisture. Pat dry with paper towels.
  3. Dredge the eggplant slices in flour, dip in beaten eggs, and then fry in olive oil until golden brown. Drain on paper towels.
  4. In a baking dish, spread a layer of tomato sauce, followed by a layer of fried eggplant slices, and a layer of Parmesan and mozzarella cheese. Repeat the layers until all ingredients are used, ending with a layer of cheese on top.
  5. Bake in the preheated oven for 30-40 minutes, or until the cheese is golden and bubbly.
  6. Let it cool for a few minutes before serving.
