Ingredients
- 2 large eggplants, sliced
- 2 cups tomato sauce
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Sprinkle the eggplant slices with salt and let them sit for 15 minutes to release excess moisture. Pat dry with paper towels.
- Dredge the eggplant slices in flour, dip in beaten eggs, and then fry in olive oil until golden brown. Drain on paper towels.
- In a baking dish, spread a layer of tomato sauce, followed by a layer of fried eggplant slices, and a layer of Parmesan and mozzarella cheese. Repeat the layers until all ingredients are used, ending with a layer of cheese on top.
- Bake in the preheated oven for 30-40 minutes, or until the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
