Melktert Cheesecake

Ingredients
- 1 1/2 cups crushed digestive biscuits
- 1/4 cup melted butter
- 1 teaspoon ground cinnamon
- 500g cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup sour cream
- 2 tablespoons cornstarch
- 1 cup milk
- 1 cinnamon stick
- 2 tablespoons flour
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the crushed digestive biscuits, melted butter, and ground cinnamon. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and cornstarch until combined. Pour the mixture over the crust in the pan.
- Bake for 50-60 minutes or until the center is almost set. Remove from the oven and let it cool for 10 minutes. Run a knife around the edge of the pan to loosen; cool 1 hour longer.
- While the cheesecake is cooling, prepare the melktert filling. In a saucepan, whisk together the milk, cinnamon stick, sugar, and flour. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from the heat and let it cool.
- Pour the melktert filling over the cooled cheesecake. Refrigerate for at least 4 hours or overnight.
- Before serving, carefully run a knife around the edge of the pan to loosen the cheesecake. Remove the sides of the pan.
