Melktert Cheesecake Bars

Ingredients

  • 1 1/2 cups crushed digestive biscuits
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 cup heavy cream
  • 2 (8-ounce) packages cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a medium bowl, mix together the crushed biscuits, melted butter, and cinnamon. Press into the bottom of the prepared baking dish.
  3. In a saucepan, whisk together the sugar, flour, salt, milk, and heavy cream. Cook over medium heat, stirring constantly, until the mixture thickens and boils. Boil and stir for 1 minute. Remove from heat and set aside to cool slightly.
  4. In a large bowl, beat the cream cheese until smooth. Gradually beat in the cooled milk mixture. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour over the biscuit base in the baking dish.
  5. Bake for 30 to 35 minutes in the preheated oven, or until the center is set. Allow to cool, then refrigerate for at least 3 hours before cutting into bars and serving.
