Ingredients
- 1 cup ground egusi (melon seeds)
- 1/2 cup palm oil
- 1 onion, finely chopped
- 2 tomatoes, blended
- 2 cups spinach, chopped
- 1 pound assorted meat (beef, tripe, or chicken)
- 2 tablespoons ground crayfish
- 2 scotch bonnet peppers, blended
- 4 cups chicken or beef stock
- Salt to taste
Instructions
- Heat the palm oil in a pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the blended tomatoes and peppers, and cook for 10 minutes.
- Add the ground egusi and stir continuously to avoid lumps.
- Add the assorted meat, ground crayfish, and stock. Simmer for 20 minutes.
- Add the chopped spinach and salt to taste. Cook for an additional 5 minutes.
- Remove from heat and serve hot with your choice of swallow or rice.
