Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned and debearded
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup diced tomatoes
  • 1 cup coconut milk
  • 1 scotch bonnet pepper, seeded and minced
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, garlic, and bell pepper until softened.
  2. Add the diced tomatoes, coconut milk, and scotch bonnet pepper. Simmer for 10 minutes.
  3. Add the fish fillets, shrimp, and mussels to the pot. Cover and cook for 10-15 minutes, or until the seafood is cooked through.
  4. Season with salt and pepper, then stir in the fresh cilantro.
