Meringue Pudding (pudim Molotov)
Meringue Pudding, also known as Pudim Molotov, is a delicious and light dessert from Portuguese cuisine. This sweet treat is made with fluffy meringue and a creamy pudding base, creating a delightful contrast of textures and flavors.
Ingredients
- 6 egg whites
- 1 1/2 cups sugar
- 1 cup milk
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, beat the egg whites until stiff peaks form.
- Gradually add 1 cup of sugar while continuing to beat the egg whites.
- In a separate saucepan, heat the milk and heavy cream over medium heat until it begins to simmer.
- Slowly pour the hot milk mixture into the beaten egg whites, whisking constantly.
- Add the vanilla extract and mix until well combined.
- Grease a pudding mold with butter and sprinkle the remaining 1/2 cup of sugar inside the mold.
- Pour the pudding mixture into the mold and place it in a large pot. Fill the pot with water until it reaches halfway up the sides of the mold.
- Cover the pot and let the pudding steam over low heat for 40 minutes.
- Once cooked, remove the mold from the pot and let the pudding cool to room temperature.
- Refrigerate the pudding for at least 2 hours before serving.
