Ingredients

  • 1 lb stewing beef, cut into cubes
  • 2 cups diced pumpkin
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced eggplant
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped
  • 1 cup coconut milk
  • 2 cups water
  • 2 tbsp vegetable oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Add the chopped onion, minced garlic, and scotch bonnet pepper. Cook until the onions are translucent.
  4. Add the diced pumpkin, potatoes, carrots, and eggplant to the pot.
  5. Pour in the coconut milk and water. Stir to combine.
  6. Season with thyme, salt, and pepper. Cover the pot and let the Metagee simmer for 1 hour, or until the meat is tender and the vegetables are cooked through.
  7. Serve the Metagee hot, with rice or roti.
