Ingredients
- 1 lb stewing beef, cut into cubes
- 2 cups diced pumpkin
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 cup diced eggplant
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 scotch bonnet pepper, chopped
- 1 cup coconut milk
- 2 cups water
- 2 tbsp vegetable oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the beef cubes and brown on all sides.
- Add the chopped onion, minced garlic, and scotch bonnet pepper. Cook until the onions are translucent.
- Add the diced pumpkin, potatoes, carrots, and eggplant to the pot.
- Pour in the coconut milk and water. Stir to combine.
- Season with thyme, salt, and pepper. Cover the pot and let the Metagee simmer for 1 hour, or until the meat is tender and the vegetables are cooked through.
- Serve the Metagee hot, with rice or roti.
