Ingredients

  • 1 lb stewing beef, cut into cubes
  • 1 lb pork, cut into cubes
  • 1 lb chicken, cut into pieces
  • 2 cups cassava, peeled and diced
  • 2 cups eddoes, peeled and diced
  • 2 cups sweet potatoes, peeled and diced
  • 2 cups pumpkin, peeled and diced
  • 1 cup okra, sliced
  • 1 cup eggplant, diced
  • 1 cup coconut milk
  • 4 cups water
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 hot pepper, chopped
  • 2 tbsp oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the oil over medium heat. Add the onion, garlic, and hot pepper, and sauté until fragrant.
  2. Add the beef, pork, and chicken to the pot, and brown the meat on all sides.
  3. Pour in the coconut milk and water, and bring the mixture to a boil.
  4. Add the cassava, eddoes, sweet potatoes, and pumpkin to the pot, and simmer for 20 minutes.
  5. Add the okra and eggplant to the pot, and continue to simmer for another 15 minutes.
  6. Season with salt and pepper to taste, and serve hot.
