Metemgee Madness
Metemgee is a traditional Guyanese dish that is a flavorful combination of various vegetables and meats, cooked in a rich coconut milk broth. This hearty and comforting dish is a staple in Guyanese cuisine and is perfect for a satisfying meal.
Ingredients
- 1 lb stewing beef, cut into cubes
- 1 lb pork, cut into cubes
- 1 lb chicken, cut into pieces
- 2 cups cassava, peeled and diced
- 2 cups eddoes, peeled and diced
- 2 cups sweet potatoes, peeled and diced
- 2 cups pumpkin, peeled and diced
- 1 cup okra, sliced
- 1 cup eggplant, diced
- 1 cup coconut milk
- 4 cups water
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 hot pepper, chopped
- 2 tbsp oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the oil over medium heat. Add the onion, garlic, and hot pepper, and sauté until fragrant.
- Add the beef, pork, and chicken to the pot, and brown the meat on all sides.
- Pour in the coconut milk and water, and bring the mixture to a boil.
- Add the cassava, eddoes, sweet potatoes, and pumpkin to the pot, and simmer for 20 minutes.
- Add the okra and eggplant to the pot, and continue to simmer for another 15 minutes.
- Season with salt and pepper to taste, and serve hot.
