Ingredients

  • 2 cups fresh fenugreek leaves, finely chopped
  • 1 cup chickpea flour
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander-cumin powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • 1 tablespoon sugar
  • Salt to taste
  • Water as needed
  • Oil for pan-frying

Instructions

  1. In a large mixing bowl, combine the chopped fenugreek leaves, chickpea flour, turmeric powder, red chili powder, coriander-cumin powder, baking soda, oil, sugar, and salt. Mix well.
  2. Add water gradually to form a firm dough. Knead the dough for a few minutes to ensure all the ingredients are well combined.
  3. Divide the dough into small portions and shape them into cylindrical dumplings.
  4. Steam the dumplings in a steamer for 15-20 minutes until they are cooked through.
  5. Once steamed, let the dumplings cool for a few minutes, then slice them into small pieces.
  6. Heat oil in a pan and add mustard seeds and sesame seeds. Once they splutter, add the sliced dumplings and pan-fry until they turn golden brown and crispy.
  7. Remove the muthiyas from the pan and place them on a paper towel to absorb any excess oil.
  8. Serve hot with chutney or a cup of masala chai.
