Methi Thepla Burrito Bonanza

Ingredients

  • 2 cups whole wheat flour
  • 1 cup fresh fenugreek leaves (methi), chopped
  • 1/2 cup yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • Water as needed
  • Oil for cooking
  • 1 cup cooked rice
  • 1 cup cooked black beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/2 cup chopped cilantro
  • 1/2 cup salsa
  • 1/2 cup guacamole

Instructions

  1. In a large bowl, combine the whole wheat flour, chopped fenugreek leaves, yogurt, turmeric powder, red chili powder, cumin powder, and salt. Mix well.
  2. Add water gradually and knead the mixture into a smooth dough. Divide the dough into small balls and roll them out into thin theplas (Indian flatbreads).
  3. Cook the theplas on a hot griddle with a little oil until they are golden brown and cooked through. Set aside.
  4. Assemble the burritos by placing a thepla on a flat surface. Add a layer of cooked rice, black beans, lettuce, tomatoes, onions, cilantro, salsa, and guacamole.
  5. Roll up the thepla to form a burrito, tucking in the sides as you roll. Repeat with the remaining theplas and filling.
  6. Heat a pan and lightly toast the assembled burritos for a few minutes on each side.
  7. Serve the Methi Thepla Burrito Bonanza hot with additional salsa and guacamole on the side.
