Ingredients
- 2 cups whole wheat flour
- 1 cup fresh fenugreek leaves (methi), chopped
- 1/2 cup yogurt
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- Salt to taste
- Water as needed
- Oil for cooking
- 1 cup cooked rice
- 1 cup cooked black beans
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- 1/2 cup salsa
- 1/2 cup guacamole
Instructions
- In a large bowl, combine the whole wheat flour, chopped fenugreek leaves, yogurt, turmeric powder, red chili powder, cumin powder, and salt. Mix well.
- Add water gradually and knead the mixture into a smooth dough. Divide the dough into small balls and roll them out into thin theplas (Indian flatbreads).
- Cook the theplas on a hot griddle with a little oil until they are golden brown and cooked through. Set aside.
- Assemble the burritos by placing a thepla on a flat surface. Add a layer of cooked rice, black beans, lettuce, tomatoes, onions, cilantro, salsa, and guacamole.
- Roll up the thepla to form a burrito, tucking in the sides as you roll. Repeat with the remaining theplas and filling.
- Heat a pan and lightly toast the assembled burritos for a few minutes on each side.
- Serve the Methi Thepla Burrito Bonanza hot with additional salsa and guacamole on the side.
