Metsaseene Supp (forest Mushroom Soup)

Ingredients

  • 500g mixed forest mushrooms, cleaned and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 1 liter vegetable or mushroom broth
  • 2 potatoes, peeled and diced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the mushrooms to the pot and cook until they release their liquid and start to brown.
  3. Pour in the vegetable or mushroom broth and add the diced potatoes. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
  4. Stir in the heavy cream and season the soup with salt and pepper to taste. Let it simmer for an additional 5 minutes.
  5. Remove the pot from the heat and use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  6. Divide the soup into bowls, garnish with fresh parsley, and serve hot.
