Mexican (adobo Tacos)
Adobo Tacos are a fusion of Mexican and Filipino flavors, combining the tangy and savory taste of adobo with the convenience of a handheld taco. This recipe puts a delicious twist on a classic Filipino dish.
Ingredients
- 1 lb chicken thighs, boneless and skinless
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 1 head garlic, minced
- 1 tsp black peppercorns
- 1 bay leaf
- 8 small tortillas
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- 1/2 cup diced tomatoes
- 1/2 cup shredded lettuce
Instructions
- In a large pot, combine the chicken thighs, soy sauce, vinegar, garlic, black peppercorns, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove the chicken from the pot and shred it using two forks.
- Heat a skillet over medium heat and warm the tortillas for about 30 seconds on each side.
- Assemble the tacos by placing a portion of the shredded adobo chicken onto each tortilla, then topping with onions, cilantro, tomatoes, and lettuce.
