Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 1 head garlic, minced
  • 1 tsp black peppercorns
  • 1 bay leaf
  • 8 small tortillas
  • 1/2 cup diced onions
  • 1/2 cup chopped cilantro
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded lettuce

Instructions

  1. In a large pot, combine the chicken thighs, soy sauce, vinegar, garlic, black peppercorns, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
  2. Remove the chicken from the pot and shred it using two forks.
  3. Heat a skillet over medium heat and warm the tortillas for about 30 seconds on each side.
  4. Assemble the tacos by placing a portion of the shredded adobo chicken onto each tortilla, then topping with onions, cilantro, tomatoes, and lettuce.
