Ingredients

  • 2 cups cooked white rice
  • 1 pound pork belly, sliced
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 1 cup green beans, cut into 2-inch pieces
  • 4 cups water
  • 3 tablespoons tamarind soup base (sinigang mix)
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup chopped cilantro
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese

Instructions

  1. In a large pot, combine the pork belly, onion, tomatoes, and water. Bring to a boil and simmer for 30 minutes.
  2. Add the tamarind soup base and green beans to the pot. Simmer for an additional 10 minutes.
  3. Warm the flour tortillas in a dry skillet or microwave.
  4. Assemble the burritos by placing a portion of cooked rice, pork sinigang, lettuce, tomatoes, cilantro, sour cream, and cheddar cheese on each tortilla.
  5. Roll up the tortillas into burritos and serve immediately.
