Ingredients

  • 2 cups basmati rice
  • 3 cups water
  • 1/4 cup dried apricots, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup golden raisins
  • 1/4 cup slivered almonds
  • 1/4 cup unsalted butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • Salt to taste

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, melt the butter over medium heat. Add the rice and sauté for 2-3 minutes until lightly toasted.
  3. Stir in the dried fruits, slivered almonds, ground cinnamon, ground cumin, and salt. Mix well to combine.
  4. Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  5. Fluff the pilaf with a fork before serving.
