Ingredients

  • 8 oz rice noodles
  • 1 lb shrimp, peeled and deveined
  • 1/2 lb pork belly, thinly sliced
  • 4 hard-boiled eggs, halved
  • 1 cup bean sprouts
  • 1/2 cup mixed herbs (such as mint, cilantro, and Thai basil)
  • 1/4 cup peanuts, crushed
  • 1/4 cup scallions, thinly sliced
  • 1/4 cup fried shallots
  • Lime wedges

Instructions

  1. Boil the rice noodles according to package instructions, then drain and rinse with cold water. Set aside.
  2. In a large pot, bring 6 cups of water to a boil. Add the pork belly and simmer for 20 minutes until cooked through. Remove the pork and set aside.
  3. Add the shrimp to the same pot and cook for 2-3 minutes until pink and opaque. Remove the shrimp and set aside.
  4. Divide the cooked noodles among 4 bowls. Top with the pork belly, shrimp, hard-boiled eggs, bean sprouts, and mixed herbs.
  5. Pour the hot broth over the noodles and toppings in each bowl.
  6. Garnish with crushed peanuts, scallions, fried shallots, and lime wedges.
