Mi Quang
Mi Quang is a traditional Vietnamese noodle dish that is packed with flavor and texture. This recipe is a delicious combination of turmeric-infused noodles, savory broth, and a variety of fresh toppings.
Ingredients
- 8 oz rice noodles
- 1 lb shrimp, peeled and deveined
- 1/2 lb pork belly, thinly sliced
- 4 hard-boiled eggs, halved
- 1 cup bean sprouts
- 1/2 cup mixed herbs (such as mint, cilantro, and Thai basil)
- 1/4 cup peanuts, crushed
- 1/4 cup scallions, thinly sliced
- 1/4 cup fried shallots
- Lime wedges
Instructions
- Boil the rice noodles according to package instructions, then drain and rinse with cold water. Set aside.
- In a large pot, bring 6 cups of water to a boil. Add the pork belly and simmer for 20 minutes until cooked through. Remove the pork and set aside.
- Add the shrimp to the same pot and cook for 2-3 minutes until pink and opaque. Remove the shrimp and set aside.
- Divide the cooked noodles among 4 bowls. Top with the pork belly, shrimp, hard-boiled eggs, bean sprouts, and mixed herbs.
- Pour the hot broth over the noodles and toppings in each bowl.
- Garnish with crushed peanuts, scallions, fried shallots, and lime wedges.
