Ingredients

  • 300g fresh yellow noodles
  • 200g shrimp, peeled and deveined
  • 4 eggs
  • 4 garlic cloves, minced
  • 2 stalks of green onions, chopped
  • 2 tablespoons cooking oil
  • 1 liter shrimp broth
  • 200ml coconut milk
  • 1 tablespoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste

Instructions

  1. Boil the fresh yellow noodles until al dente, then drain and set aside.
  2. In a separate pot, heat the cooking oil and sauté the minced garlic until fragrant.
  3. Add the shrimp and cook until they turn pink and opaque.
  4. Pour in the shrimp broth and coconut milk, then add the tamarind paste, sugar, and salt. Let it simmer for 10 minutes.
  5. Divide the boiled noodles into serving bowls.
  6. Pour the hot shrimp broth over the noodles.
  7. Top each bowl with a boiled egg and chopped green onions.
