Ingredients
- 300g fresh yellow noodles
- 200g shrimp, peeled and deveined
- 4 eggs
- 4 garlic cloves, minced
- 2 stalks of green onions, chopped
- 2 tablespoons cooking oil
- 1 liter shrimp broth
- 200ml coconut milk
- 1 tablespoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
Instructions
- Boil the fresh yellow noodles until al dente, then drain and set aside.
- In a separate pot, heat the cooking oil and sauté the minced garlic until fragrant.
- Add the shrimp and cook until they turn pink and opaque.
- Pour in the shrimp broth and coconut milk, then add the tamarind paste, sugar, and salt. Let it simmer for 10 minutes.
- Divide the boiled noodles into serving bowls.
- Pour the hot shrimp broth over the noodles.
- Top each bowl with a boiled egg and chopped green onions.
