Ingredients

  • 400g fresh yellow egg noodles
  • 300g shrimp, peeled and deveined
  • 4 eggs
  • 4 cups coconut milk
  • 4 cloves garlic, minced
  • 2 tablespoons tamarind paste
  • 2 tablespoons palm sugar
  • 2 tablespoons cooking oil
  • 1 teaspoon salt
  • 1 teaspoon ground white pepper
  • 4 green onions, thinly sliced

Instructions

  1. Boil the fresh yellow egg noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the cooking oil over medium heat. Add the minced garlic and cook until fragrant.
  3. Add the shrimp and cook until they turn pink and opaque.
  4. Pour in the coconut milk, tamarind paste, palm sugar, salt, and ground white pepper. Stir well and let it simmer for 10 minutes.
  5. In a separate pot, boil the eggs until hard-boiled. Peel and halve them.
  6. To serve, divide the boiled noodles into serving bowls. Ladle the shrimp sauce over the noodles and top with a halved hard-boiled egg. Garnish with sliced green onions.
