Ingredients
- 400g fresh yellow egg noodles
- 300g shrimp, peeled and deveined
- 4 eggs
- 4 cups coconut milk
- 4 cloves garlic, minced
- 2 tablespoons tamarind paste
- 2 tablespoons palm sugar
- 2 tablespoons cooking oil
- 1 teaspoon salt
- 1 teaspoon ground white pepper
- 4 green onions, thinly sliced
Instructions
- Boil the fresh yellow egg noodles according to package instructions. Drain and set aside.
- In a large pot, heat the cooking oil over medium heat. Add the minced garlic and cook until fragrant.
- Add the shrimp and cook until they turn pink and opaque.
- Pour in the coconut milk, tamarind paste, palm sugar, salt, and ground white pepper. Stir well and let it simmer for 10 minutes.
- In a separate pot, boil the eggs until hard-boiled. Peel and halve them.
- To serve, divide the boiled noodles into serving bowls. Ladle the shrimp sauce over the noodles and top with a halved hard-boiled egg. Garnish with sliced green onions.
