Ingredients

  • 8 oz (225g) egg noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 carrot, julienned
  • 1 cup cabbage, shredded
  • 2 tbsp sweet soy sauce (kecap manis)
  • 1 tbsp soy sauce
  • 1 tsp chili paste (sambal oelek)
  • 1/2 tsp ground white pepper
  • 4 eggs
  • 4 green onions, chopped

Instructions

  1. Boil the egg noodles according to package instructions, then drain and set aside.
  2. Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the garlic and onion, and stir-fry until fragrant.
  3. Add the carrot and cabbage, and stir-fry for 2-3 minutes until slightly softened.
  4. Push the vegetables to the side of the wok, then crack the eggs into the empty space. Scramble the eggs until cooked, then mix with the vegetables.
  5. Add the cooked noodles, sweet soy sauce, soy sauce, chili paste, and white pepper. Stir-fry for another 2-3 minutes until everything is well combined and heated through.
  6. Remove from heat and garnish with chopped green onions before serving.
