Ingredients

  • 250g dried noodles
  • 1 cup unsweetened peanut butter
  • 4 cups vegetable broth
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon tamarind paste
  • 1 teaspoon chili powder
  • 1 cup bean sprouts
  • 2 green onions, thinly sliced
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, bring water to a boil and cook the noodles according to the package instructions. Drain and set aside.
  2. In a separate pot, combine the peanut butter, vegetable broth, garlic, onion, soy sauce, brown sugar, tamarind paste, and chili powder. Bring to a simmer over medium heat, stirring occasionally.
  3. Add the cooked noodles to the peanut sauce and toss to coat evenly.
  4. Divide the noodles and sauce among serving bowls. Top with bean sprouts, green onions, and a squeeze of lime juice.
