Ingredients
- 250g dried noodles
- 1 cup unsweetened peanut butter
- 4 cups vegetable broth
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon tamarind paste
- 1 teaspoon chili powder
- 1 cup bean sprouts
- 2 green onions, thinly sliced
- 1 lime, cut into wedges
Instructions
- In a large pot, bring water to a boil and cook the noodles according to the package instructions. Drain and set aside.
- In a separate pot, combine the peanut butter, vegetable broth, garlic, onion, soy sauce, brown sugar, tamarind paste, and chili powder. Bring to a simmer over medium heat, stirring occasionally.
- Add the cooked noodles to the peanut sauce and toss to coat evenly.
- Divide the noodles and sauce among serving bowls. Top with bean sprouts, green onions, and a squeeze of lime juice.
